In September of 2011, I had the amazing opportunity to go to Vienna.  Before traveling, it was recommended to get some vaccinations.  So I did, and then set off on my trip.  l was fine until we were over the middle of the Atlantic Ocean.  I felt so sick, and I was in a window seat.  Ideal situation, huh?  It didn’t improve much upon landing.  I remember laying on the airport terminal in Frankfurt trying to get ahold of my stomach.  It was miserable.  Thankfully, it only lasted a day.

Or so it seemed.

A few weeks later, I was feeling worse and was overwhelmed with nausea.  And it never went away.   After visiting many doctors, having many tests done, and having recommendations for medications and surgeries, I just wanted to lay down and cease to exist.   There were no definite solutions, just trial and error, which I didn’t want to go though.

A neighbor of mine recommended a functional or holistic clinic that looks to diagnose the cause, and not the symptom.  I did have to have some more tests done, but there were actual results with these.  I had a variety of food intolerances: eggs, dairy, almonds, beef, and gluten were the big ones.   My heart sunk.  I could handle no dairy, I could handle no eggs, I could handle no gluten, but all three?   I gave it a chance, and my health improved dramatically.

But what about bread, cookies, cupcakes, pasta etc?  I loved baking and cooking.  I was devastated, but I cared for my health more.  Through much research, and some helpful cookbooks (Healthy Gluten-Free Life being my food savior), I found that life could easily go on.  I was able to get back to my love, cooking.  I hope that this blog will help those with food allergies and intolerances, and inspire them to get back into the kitchen.
